Maddog’s Stuffed Squid Tubes Ingredients - 6 fresh medium six squid tubes - 10 scallops - 300 grams medium size peeled raw prawns - 2 medium size whiting fillets (or similar) no bones - ½ cup rice (uncooked) - 4 – 6 spring onions or half a Spanish onion - 1 red capsicum - Fresh oregano leaves - Fresh flat leaf parsley - Fresh garlic (4 knobs) - 1 tomato - Red pasta sauce (venetian – Rigaletto or similar) - Fish sauce - ½ cup dry white wine - Ground pepper - Salt - Chilli powder - Olive oil - Tooth picks Method - cut scallops into quarters - cut prawns into thirds - cut whiting into 1cm cubes - boil rice and allow to cool - dice spring onions or spanish onions finely - dice capsicum into 6mm pieces - chop oregano leaves, parsley and garlic finely - dice tomato into 6mm pieces - combine all ingredients in large bowl - add ground pepper, salt, chilli powder and mix through all ingredients - drizzle white wine over ingredients - drizzle a baking dish with olive oil - stuff the squid tubes a little over ¾ full ensuring ingredients packed well throughout each tube - seal each tube with tooth picks to hold together during cooking - lay tubes into baking dish - cook in pre-heated oven @ 200º C for 40 minutes - pre-heat red pasta sauce - plate up squid tubes and pour over red pasta sauce and serve immediately As they say in the classics… “Get it into ya!!” ©That’s Fishing Productions Pty Ltd 2010
