Maddog’s Asian Shark with Oyster Sauce Serves – 2 people Ingredients - 2 pieces of gummy shark or similar shark - ½ cup rice (uncooked) - Small piece ginger - Vietnamese basil (pointed leaf) - coriander - parsley - soy sauce - oyster sauce - corn flour - vegetable oil - 1 egg - ground pepper - salt Method - cut shark into portions 10 cm x 2.5 cm - marinate in mixture of soy sauce, grated ginger, egg white and corn flour for 30 minutes in fridge - boil rice - chop Vietnamese basil and coriander leaves coarsely - heat 2 tbs vegetable oil in wok - add fish with marinade in hot wok - cook fish for a couple of minutes each side - stir in oyster sauce - add vietnamese basil and coriander leaves - cook for one minute while tossing gently - drain rice and serve onto plates - place cooked shark on top of rice and spoon sauce over shark - garnish with parsley and serve ”You’re gonna love it!!” ©That’s Fishing Productions Pty Ltd 2010
