Maddog’s Salt and Pepper Squid Serves – 2 people Ingredients - ½ kg fresh cleaned squid - corn flour - self raising flour - vegetable oil - 4 shallots - 2-3 cloves garlic - chilli (whole or pickled) - chinese five spice - ground ginger - ground pepper - table salt - chicken stock powder Method - scour squid lightly in a criss-cross pattern and cut into 3cm strips - cut squid into triangles - combine spices in a small bowl and keep for later - chop shallots and garlic finely - mix self raising flour, a dash of oil and water into a batter - coat squid pieces in batter mix and remove - lightly flour squid pieces in corn flour until dry - deep fry squid for 1 minute and remove and place on paper towel - quickly fry chilli, shallots and garlic in a wok - add squid into wok and sprinkle with 1- 2 tbls of mixed spices powder - toss squid lightly to coat with spices and chilli, garlic and shallots - serve immediately with a garden salad ”Rippa mate!!” ©That’s Fishing Productions Pty Ltd 2010
